Do you like to cook? I do and I try to put tasty meals on the table. From the weight we've gained I think I'm doing ok :-) I make a lot of food from scratch trying to avoid packaged foods. I love my veggies which leads me to making broth! I keep all my scraps until I have about two cups worth and then I cook them. Of course you can use whole carrots, onions, celery etc but I keep the stems from mushrooms, skins and tops from onions, celery leaves, stems from parsley...whatever bits and pieces to make broth.
Once you've gathered all the ingredients cover with water and add peppercorns, bay leaf, a clove or two and bring to a boil, lower heat and simmer for about an hour. You let it cool and remove all the spent veggies. Viola!
I use my broth to 'fry' any onions etc for recipes instead of oil. I also use it in my morning smoothies made with vegetables. My Vita Mix makes excellent drinks!
We went to St Augustine to go to a Seafood Festival. the drive was interesting because it was so windy! The route we take has a lot of farm fields and they were losing a lot of sand? soil? whatever you call it, it was like a dustbowl out there! Along the way we saw Texas Longhorn cattle, Wood Storks and before we left Welaka, Sandhill Cranes.
As we approached the the area where the festival was being held we ran into traffic and as we drove around looking for a parking spot we discovered everyone was at the festival! I'm not sure how long or far we searched for a spot to park our black beastie but it was a no go...so we just kept driving and stopped for a pizza and beer for lunch.
After lunch we went shopping. Stopping at Diane's Natural Market, Camping World and Bed Bath and Beyond. The drive home was less windy and Boo was happy to see us.
After everything was put away we settled in with our afternoon coffee and peach pie while Boo had his dinner. No I didn't make the pie.....it's from Schwan's but it is very tasty. It's Terry Browns fault!!! She told me they were good a couple years ago in the Rio Grande Valley.

Git er Done
If you've been wondering, Boo is doing sooooooo much better. Of course the meds made him sleep more and the Vet said he'd be thirsty from them and he has been drinking a lot. But his skin is clearing up and he doesn't spend all his time scratching. I've not found any more fleas and I'm hoping there are no more in the house. We will spray until we're sure all the eggs are dead!
The other day Anne, Pat and I went to check out the new Costco store in Pharr. I've belong so we didn't all have to join. We all found things to buy and split! I also saw a store demonstration on the Vita-Mix. I've been wanting one for a long time and the sale price was right up my ally.....my only problem now is where to store it! Never fear, I'll find a spot for it.
Yesterday Anne and Pat hosted a 'last here' party. Everyone was invited for this last bash of the season and there were quite a few people who showed up. Everyone brought food, chairs and drinks and just hung out. 'where ya headed?' 'are you coming back next season?' were the questions most asked. It's so nice to know we can keep in touch with everyone online with Facebook.
So many of our friends are already traveling and hopefully we'll see them 'down the road'.
Jim is getting chores done so we can pack up and leave. This morning he had the passenger windows on the truck tinted. I guess $45 is cheap enough for the comfort. It would have been even better if we could have kept the darker tint and avoided the expense!
When he came home from that he started dismantling the patio. First he removed all the furniture and then pressure washed the screens so we can put them away clean. Then he pressure washed the patio mat...on Thursday the rig will be washed
almost time to leave, we gotta get er done!

Lazy Weekend
Our weather has been bouncing around from crisp mornings to sultry days. I mention this because we have to check the overnight forecast to decide what coverings we need on the bed. Last night it was the quilt and in my case quilts.
Jim has had the past three days off from work and we've enjoyed out time together. Friday we dropped Boo off at the groomer and then we headed to Pappadeaux Seafood Kitchen that just opened up here in the Valley. We've enjoyed their food before so we splurged. Worth every penny but I'm glad it's a drive to get there as we don't need to go often! We both had appetizers, Jim had the Boudin and I had a cup of seafood gumbo. Of course we had beer and they brought French bread and butter. We probably could have left then instead of waiting for our lunch.
Jim ordered a shrimp po-boy which came with a half plate of fries. I opted for the grilled catfish on a bed of dirty rice and a side of rice with a seafood tomato based sauce. All of it was verrrry good! I brought home most of my lunch and Jim brought home part of his appetizer. Which we enjoyed last night for dinner.
After lunch we went to the Outlet Mall so Jim could find some sandals and we did! We hit several shoes stores and he found a pair in Skechers. Of course they were having a sale, buy one get half off another pair, so I found a pair. Even at that price we stilled paid a lot for two pair of shoes.
On the way home we got the call to pick up Boo so we didn't make any other stops. We arrived home, changed clothes and I had some coffee. The managers, Jeni and Don stopped by to tell Jim his shirts had arrived so he pedaled down to pick them up and found out he had a meeting at 1700. We had a good laugh because it was his idea to have happy hour with our friends and he missed out on some of the fun!
Amy and Dan, Pat and Vern, Jim and I (Boo too) joined Anne and Scotty for some good eats and drinks. Dan brought the Vita-Mix and fixins for the Margarita's, Vern always brings his beer in a cooler and Amy and Anne had moscato wine. Let's see, for food we had grilled hot dogs, pico de gallo and chips, I think there were two cheesy dips, fresh veggies and M&M's. Pat always supplies the guys with those chocolate tid bits.
Taps can be heard from the Veterans Cemetery and Friday night was especially clear, the wind was blowing just right. I had just taken down the flags when we heard Taps and coyotes! Day is done. But the party was in full swing. Jim arrived a short time later and we all sat around having a good time when Jim finally got chilled enough (he was wearing shorts) to head home. The rest of us were dressed more warmly! I picked up our stuff and joined him. It was almost 2000 so it was time to break up the party.
He showered using all the hot water and when I could I showered and then did the dishes. I made popcorn and we ended the day watching TV.
Saturday was another lazy day. I always have the daily chores of dishes and bed making, maybe some laundry. Anne and I went shopping. We stopped at TJ Maxx and then HEB for milk and bread, etc. Jim had gone out to Academy Sports and arrived home just after me.
We had coffee on the patio enjoying the breeze and chatting. As I said earlier we had leftovers for dinner and the dishes were just as good the second time around.
The moon was brilliant rising in the east and I spent a lot of time taking pictures of it
